2024年4月份見識之旅縮影 

  2024年4月21日由呂明澐小姐帶領25位祐生見習生及家長們,進行高屏食魚教育體驗之旅。眾人搭乘高鐵南下,車窗外高掛的卷雲預告著整日行程都將會是晴朗的天氣,上午參訪首站是位於高雄前鎮的「珍芳烏魚子見學工廠」,由於提早抵達,見習生們趁著二樓放映室啟動前的空檔,迫不及待地在一樓互動區,玩起了「曬烏魚子機台」與「烏魚迴游路線的電流急急棒」遊戲;稍後,由身為高雄在地人的導覽老師,透過影片與風趣的解說,讓大家很快地對自家工廠生產的烏魚子,是如何從鹽埕的傳統工廠,保存技法精髓而改良製程有了概觀理解,也經由參觀現場符合食安標準的清洗魚卵、卵袋膜以綿繩綁頭、講究經驗手法的海鹽鹽漬、脫鹽時間與整形修補工序,甚至還有人工氣候調節室來控制風乾日曬等後段步驟,讓大家進一步了解此種傳統美食何以蘊蓄半熟發酵風味。儘管眾人在導覽與互動問答的過程中,對烏魚(鯔魚)之捕撈歷史、養殖、加工應用、品質色澤已有基本認知,然而許多見習生及家長們對過去曾吃過偏硬、變褐色且略帶腥味的陳年烏魚子,仍有揮之不去的刻板印象,導覽老師也自陳小時候最討厭吃的一道年菜就是烏魚子,但接下來的火烤烏魚子體驗保證會令人改觀;大家先依照指示小心翼翼地撕下烏魚子最外層的卵袋膜,避免稍後火烤時燒出苦味,再以竹籤戳起半透明橘紅的塊狀烏魚子,在飄動的高梁酒藍焰上來回加熱,不出三、五分鐘即可烤好配上白蘿蔔及蒜苗片食用,而活動之初宣稱不喜歡吃烏魚子的見習生們,個個對魚油散發的鮮美風味與黏中帶Q的口感讚不絕口。
  For the study tour of April 21, 2024, Ms. Lu Ming-yun led 25 ARF interns and their parents on a trip to Kaohsiung-Pingtung area to learn about edible fish. Rolling clouds outside the windows of the southbound high-speed rail forecasted clear weather for the entire day. First stop of the day was Zhenfang Mullet Roe Tourism Factory in Qianzhen, Kaohsiung. While waiting for the screening room to be ready, the interns happily spent their time playing games in the interactive area. During the video presentation by local guide, everyone quickly had a general understanding of how preservation techniques used by traditional factories in Yancheng were improved to produce mullet roe in the factory. Everyone also found out how the traditional delicacy obtained its half-cooked fermented flavor after observing food-safety-compliant processes, including roe washing, tying roe pouch with cotton string, curing with sea salt, salt removal and shaping, and drying in climate regulating room. Despite gaining a basic knowledge of mullet fishing history, rearing, processing, and roe quality and color, during the Q&A session, many interns and parents could not shake off the impression of hard, brown and slightly fishy aged mullet roe they had eaten in the past. However, the tour guide promised that the grilled mullet roe experience that came next was going to change everyone's mind. After carefully tearing off the outermost layer of the roe pouch, pieces of translucent orange-red mullet roe were skewered with bamboo sticks and grilled over flickering blue flame of sorghum liquor. Within 3 to 5 minutes, roe pieces were served with radish and leek. Interns all praised for the delicious flavor of the fish oil and the sticky and chewy texture.
  
  稍後,大家帶著顛覆性的烏魚子味覺記憶轉往屏東枋寮,遊覽車沿台一線向東南方行駛,窗外幾乎是由農田綠、魚塭藍及光電板金屬灰組合而成的南方地景,隨車導遊介紹著南北客家生活與飲食文化差異,以及屏東整年可買的農特產,讓即將抵達新龍社區的一行人,更期待這趟體驗之旅的午餐菜色。有龍膽石斑故鄉之稱的新龍社區,力推食漁、樂漁、慢魚「新三漁」的產業結合休閒旅遊,中午時分,眾人在社區基地「新三漁」用餐,漁家特色餐桌上龍膽石斑湯、清蒸石斑、乾煎午仔魚輪番登場,還有蓮霧果品等,可說是營養可口又色香味俱全;而如此優質的在地食材,大家也經由社區導覽時,解說員對傳統漁具、石斑魚魚苗培育介紹,DIY包龍膽石斑的魚丸、親自餵食體型碩大的龍膽石斑等活動,對漁法、養殖漁養與後續加工所要投入的心力,有了深一層的體會。由於枋寮天氣炎熱,解說員特別讓滿頭大汗的見習生們可以再領取魚鱗霜淇淋,當作轉往「大武力福德宮」及枋寮火車站旁的「藍皮意象館」景點前的小點心。至此,本日參訪活動已近尾聲,大家在氣溫攝氏30度的國境之南合影留念後搭車北返,並期待於下次見識之旅再相見。

  Still savoring memory of tasty mullet roe, everyone headed to Fangliao, Pingtung. Scenery along the way was mostly green farmlands, blue fish ponds and metallic silver photovoltaic panels. Everyone was excitedly looking forward to lunch in Xinlong community as the accompanying tour guide explained the cultural differences between northern and southern Hakkas, and introduced agricultural products available all year round in Pingtung. Famous for its giant grouper, Xinlong community is a strong advocate of fish farming, recreational fishing and sustainable fishing. Everyone enjoyed healthy and delicious lunch at "Xin San Yu" around noon, which served giant grouper soup, steamed grouper, pan-fried threadfin and wax apple. During the community tour later, everyone learned about traditional fishing tools and cultivation of grouper fish. DIY fish-ball making and hand-feeding of giant groupers also provided deeper understanding of aquaculture techniques, fish farming and processing. Before visits to "Dawuli Fude Temple" and "Breezy Blue Station", interns were given special fish-scale soft serve as a snack. As the tour came to an end, everyone took a group photo to capture memories of the southern wonderland and looked forward to seeing each other again in the next study tour.
